So here's the deal:
A buddy told me that deep sriking counts as having moved 12". A unit on a swift open transport can move 12", disembark and assault another 6".
Therefore, couldn't a swift, open transport deep strike, then let the unit disembark 2" , then assault 6", getting it into combat the turn the vehicle deep strikes, without exposing it to one turn of fire?

Read the rules p.95, they are clear.
The transport cannot move further. The unit can disembark 2". The unit cannot move further. The unit cannot assault.
There is no exception for swift open transports.
I've been told that some units exist which could disembark and charge after a deep strike but that is clearly stated in their specific entry.

Calisson is right. Some units get to assault after deep striking but those are few and far between and have it clearly written in their rules (Seeding Swarm Genestealers come to mind... unless they changed since last time I played)

SM Vanguard Veterans are another example. Blood Angels Vanguard Veterans, in particular, are very adept at this because they only scatter d6", instead of the normal 2D6", so it's much easier to get them to land within Assault range of the enemy on a DS.

IIRC, summoned daemons in a CSM army (as opposed to any daemons in a daemon army) can do it, and since they have to be summoned within 6" of an icon they will never scatter.
Pity they aren't hugely fantastic in assault.
