As for ideas, thought of the Baltasar Ghelt Pegasus? I find it very pretty and it shouldn't be too difficult to convert into a dark Pegasus (no female legs attached either)...
As for the rider, I've only converted a 'walking' noble up untill now...
No brainstorming done yet.
How about this as a highborn riding something?

What about the Dark Eldar Jetbike Wych legs? I think they're plastics so they can be modified easily.

Yeah I've got the hellion riding a manticore, though I've wanted to put him on the Black Dragon. Only have the weapon to do for him to be finished. I want him to have a double handed weapon, probably a draich blade, so I can use it as the Crimson Death.
